i have a confession.

i feel a little sheepish admitting the fact that although i consider myself one really great mom, i sort of suck as a homemaker lately.

no, i’m not having a downer, not needing validation, i do.

i haven’t made dinner for my family in months.
when i do, it’s like a freak occasion that nearly causes a riot up at the big red clifford house.

how do we eat then?

whilst i’m glued to the computer still wishing more hours in a day,
that man grills, or makes pasta or burritos like the best mom i know.

i feel like i should make him an apron. with ruffles.

so last night, i had a few minutes, and was motivated to make dinner happen.
staring in my fridge/freezer, i had no veggies, nothing, but 2 teenage-sized chicken boobs.

“peg, what am i making for dinner with my 2 tiny chicken boobies?” i asked my mother.
“chicken chili.” she replied, with no hesitation at all.

after going through my kitchen, it was decided i needed a trip to the store,
or it was pasta for the poor, motherless clifford boys again.
a good “mom thing” to do anyway, and it had been a while…

she told me what to do, and i figured you might want to know too…
cause this is totally going in my, “when all i have is 2 chicken boobs and some beans”
kind of night stash of recipes.

i went ahead and kicked it up a hint, and aptly changed the name for you:

white girl chili

ingredients:
2 chicken boobs
1/2 yellow onion
1 can white beans
1 can pinto beans
your favorite salsa verde 
{Herdez, should be your favorite}
1 can green chilli
white pepper
black pepper
crushed red pepper

“here’s what you’re gonna wanna do”: {in my mother’s words}
sautee up the onion {cause that always smells like you’re making dinner}, then throw in your chopped chicken boobs. chop em up about 1/2 in. after they brown, throw in 1/2 jar of the green salsa verde, the beans, chilli, and pepper to taste. we like it with some grated cheese on top, and even sour cream if you’re feeling fancy. but only if you’re feeling fancy.

Next time: I’m going to sautee up some jalepeno with my onion, cause that’s just how I feel about it. It could also probably take a can of corn or some chopped bell peppers and not be sad either….
