this week i have had an average of 5 hours of sleep.

it’s been long, to say the least.  but good.
just long.

the past few weeks i haven’t had the brain, or time, or energy to meal plan…
or shop appropriately…

i was lamenting to my mom that i felt like a b+ mom, but a d- wife,
{while sitting in the grocery store eating panda express for lunch cause we didn’t eat before we went…}

long story short,
there, in the store, my mom talked me down from a ledge.
she told me i needed help. like someone to watch my kid for a few hours or do my meal-planning. yes!

she gave me a 3-day meal plan,
and sent the ingredients to me within 5 minutes.

and it saved me.

i made dinner all week.
and that was a huge accomplishment, i hate to admit.

i bought what she told me, right then, and just improvised, come meal time…
and having a plan before hand, who knew, works wonders!

stacked chicken enchiladas
{recipe for 2-3}

lots of corn tortillas
enchilada sauce
2 large chicken boobs
1/2 onion
cheese
green chili
hot sauce

if you want:
green onion
sour cream
whatever else you’d put in enchiladas…

saute up some sliced onion in a pan with olive oil until clear, add your chicken boobs in small chunks.  {i fileted mine, then into small pieces so it’d cook fast.} season with a little salt n pepper until cooked through…

secret tip: 
 throw chicken in your kitchen aid or bosche, while piping hot, 
with the paddle attachment. {the one you use for cookie dough}.
slowly add the speed until at full speed and  
watch your chicken shred like eddie van halen.
add the sauce, green chili, and hot sauce to your now {finely shredded} chicken. layer tortilla, chicken, shredded cheese, {and whatever else}, and repeat…. you get the idea. this isn’t rocket science…  nuke em in the microwave for a few seconds before serving to melt the cheese.
