So, for the past few years, I have been a protein shake in the morning person. But as my husband has been on Keto, and my kids want pancakes all the time, we scoured for the best Low Carb Pancakes we could find. The problem with pancakes made without sugar is that they don’t want to fluff up normally. It means that half of the recipes you will try will be super eggy or too dense or just not taste like the real thing. These low carb pancakes are the best I’ve tried. And we have tried a lot friends. A lot.
I think adding in a bit of cinnamon and/or nutmeg goes a long way on these too. Or it’s great to add in sugar free chocolate chips or to change up the extract from vanilla to almond…etc. When we are not concerned with staying super low carb, will still usually go for these and maybe add some banana to kick it up. But really, these are great on their own.
Making the Perfect Low Carb Pancakes
These pancakes are delicious by themselves, they are. But the other real star is this NO CARB and NO CALORIE syrup that is so good. We just ordered it on Amazon cause I was too worried it would take me forever to find at the grocery store, but some stores do carry it. We keep this around so we can pour it over a mug cake every now an again too. My peanut butter mug cake with a little of this stuff and some whipped cream is a real treat!
