we had the full meal-deal yesterday at my aunts house for st patty’s day.
she made the corned beef and cabbage and it was delightful.
i found some yummy irish soda bread at the bakery and we all loved that too.
it’s fun to have random holidays to eat new food.
i kept thinking of these yummy treats i remember having lots in college…
they were in a few bakeries around, and huge!
these were so fast and easy, i think i’ll just always keep the stuff around
for a quick take it and go treat.
warning: very addicting
mint oreo rice krispies
1/4 cup butter or margarine {1/2 a stick}
1 10oz bag marshmallows
5 1/2 cups of rice krispies
1/2 teaspoon green food coloring
1/2 teaspoon mint extract10-12 mint-filled oreos*andes mints or chocolate to melt on top 😉
what to do
throw your oreos in a ziplock bag and crunch them up with your hands, and set aside. melt the butter in a large microwave-able bowl for about 45 seconds {melt it}. add the marshmallows right away and toss em to coat em. microwave for about 1 min 30 seconds. just before stirring, quickly add your mint and coloring, then stir well. then add in your krispies until all are coated and green. drop in the oreos and mix it up. smoosh it into a 9×13 and wait till it cools all the way to serve. {the hard part}these here, were in a 9×9 to make em thick.

You can't keep doing this to me! My all time favorite dessert is a rice krispies treat but you just keep making them so much better… I would gain 100 lbs if I lived in your kitchen! 🙂

Um…I finally made these (I love mint and chocolate) and then me & the hubby ate the entire 9×13 pan in like 2.5 days. So much for losing my baby weight! 😉 Soooo yummy and addicting, like you said.
