i haven’t been making food lately. really, for the last 2 weeks.
my toddler and i have been battling the bathroom and grounded there until he poops on his own. without the aid of treats and an ipad.
he knows how, he can, but now it’s just a struggle. and the struggle is real, friends.
so most days, my husband comes home to a messy house and i ask him WHERE we are eating.
cause there’s no way…. POTTY TRAINING might be the death of me.
so many lightning mcqueen big boy pants have been sacrificed to that end,
and i wish there were many more tears over it…
i was feeling all kinds of anxiety and starting to feel sorry for myself and this awful phase of MOTHERHOOD,
when i saw a quote that a dear friend of mine posted:

i had been weary and in despair.
my heart was lightened as i thought of my friends.
oddly, i thought right away of these cookies,
and then who needed them more than me.
it was a cure to my awful day and week, and i needed the reminder oh so badly!
{and now it sounds like i was selfish to give these away because i needed the lift. i guess it goes both ways!}
these are probably the best sugar cookies i’ve had yet, and the coconut and lime are just the perfect combo.
i’m not usually a put-coconut-in-my-cookies fan… {i feel similarly about nuts…}
but i’m changing my freakin tune now… especially if that coconut is toasted.
OH HOLY NIGHT, these are naughty. the lime and zest makes these cookies pretty, and smell amazing,
and adds the perfect bright zing and tang that they need. the coconut makes them chewy and the perfect texture.
and after seeing another friend post her key lime pie cookies, i thought i’d try kicking these already naughty-looking coconut lime cookies up a notch.
i added lime and coconut to my already favorite cream cheese frosting and with lime on top,
I WAS IN LOVE!
save this cream cheese frosting recipe stat- it uses more butter, less sugar, so it’s thicker, creamier, and not as sweet as a usual powdered sugar-based frosting…
you will NOT be disappointed. and i’m not just saying that cause i make money writing a blog.
for realzies. this frosting could AND SHOULD go on anything/everything.
