i saw paula deen make this naughtiness with acorn squash.
 and since fresh n easy had em on sale,
there was absolutely nothing i could do but comply.
after all, it was “something new” night…

just mix up the ooey gooey stuff…
[i used agave instead of syrup….cause i had some,
and i knew it would richen it up a tad…]

and after it hangs out in its sugar bath sauna,
hello lovelies!

{tip for you: after you cut off the tops to lay em flat on your pan,
  they might threaten to burn your pan into a smelly black mess.
 two words: parchment paper}

 to go with my little squash beauties,
i figured nothing short of tammy veater’s not-so-healthy
chicken n stuffing casserole

{normally, i am quite against using cans of cream of chicken if i can avoid it….
but i found the “lighter version” and i rationalized this one cause i had a craving….
right…. can’t avoid those….}
pre-cook 8 –10 boneless skinless chicken breast.  In an electric fry

pan use some virgin olive oil to cover the bottom of the pan.  Lay the
chicken in the pan flavor with Mrs. Dash, Lowery’s Season Salt,
pepper, and cut some onion up on top of the chicken.  Cover with a lid
and let the flavors absorb in the chicken.  Let each side cook until
golden brown.  Once the chicken is  cooked through out remove from pan

In a glass baking dish spray pam on the pan.  Place the chicken
breasts neatly on the pan.  In a separate mixing bowl.  Mix:

2 cans cream of Chicken Soup
1 pt. Sour cream
¼ cup chicken broth
Season to taste
Salt, pepper, Lowery’s Season Salt, etc.

Evenly distribute the mixture over the top of the chicken.  (It does
not have to be a lot.)  Just a nice coating over the chicken breasts.
Cover with lid or foil –   Place in the oven at 375 degrees.  Cook
until the sauce is bubbling through out the chicken.  Approx. 45min.

While chicken is cooking take a large round box of Stove Top Stuffing.
 Cook on the stove with the recommended directions.  Do Not
overcook!!!  Once Stuffing is nice and fluffy take the pan of chicken
out of the oven – evenly distribute the stuffing over the top of the
chicken.  Put the foil back on the top for 10 –15 minutes until sauce
is bubbling through the stuffing.  Take the foil off for the last 5
minutes and let stuffing lightly brown.

{i just put my little squash dudes on the bottom rack and
cooked em both up at the same time. beautiful.}
cc is on this “cleanse” thing for a whole week.
like fruits and veggies and stuff…
probably to get ready for the onslaught that is the holiday feed.
and i should be eating like that too…
so we called this our “last supper”
 probably will be too, for all we know…[sigh….]
