sriracha lime chicken skewers recipe

 

when we are trying to lose weight, 
we default to the grill.
 
i was raised on food from the grill.
growing up, my dad’s go-to meal was steak and potatoes,
and he was a bit of a grill master with chicken and kabobs too…
and it helped that my parents are amazing green thumbs.
we always had fresh veggies in the summer, straight from the garden.
so naturally, we came up with lots of ways to eat them…
next to roasted in the oven, grilled is my fave.
 
i saw this recipe initially on one of my favorite food blogs kitchen meets girl.
her photos will kill you.
 
i had to adapt a little since i didn’t have everything we needed to do it her way,
but they turned out amazing! 
 
we roasted veggies in the oven to eat along side this for a healthy,
have-to-lose-15-pounds-in-2-months kind of meal.
lets hope it works, cause we’ll be doing it again soon…
 

 

sriracha lime chicken skewers
adapted from a super mouth watering recipe from kitchen meets girl

3 Tbs Soy Sauce {or 2 Tbs Teriyaki and 1 Tbs water}
juice from 2 limes
1 tsp lime zest {from 1 lime}
1 1/2 tsp salt
1 Tbs vegetable oil
1 1/2 Tbs Sriracha sauce
1/4 cup honey
1 tsp ginger
4 garlic cloves
 what to do:
 
1. put all ingredients in a blender until well blended. reserve about 1/2 cup of marinade. the rest goes in a ziploc with the chicken to sit for 6 hours {confession: we didn’t marinade ours for long. we used a small amount to coat the chicken, then basted the rest on the grill. the longer it marinades the more innfused the flavor will be.}
2. place marinaded skewers on a medium-high heat grill, turning every few minutes for about 10-15 minutes. if chicken browns too fast, turn the heat down. baste with remaining marinade as it grills.
3. pull off the grill and eat em!
