and all week i was craving this fruit dip that my girl amber made
and i was dying to throw it in a trifle
i love trifles for some reason… and i have had one as my birthday cake for the last few years cause i am always craving something light, but super naughty…

{and since my birthday is next week…}
 turns out, it was a great idea…
the hint of coconut flavor in with the fruit and pudding
made this super light and summery and perfect.
my “i-don’t-really-eat-dessert” uncle even had 2 servings!
i would call that a win!
i added a bit more pineapple juice and a bit more coconut to the fluffy filling to give it that piña colada vibe and with an angel food cake and the fruit it was just perfect!

  • 1 angel food cake*, cut into 1in cubes
  • 1 small package of instant vanilla or coconut cream pudding {3.4 oz}
  • 2 cups cold milk
  • 4 oz cream cheese
  • 1/2 (15oz) can cream of coconut*
  • 1/2 (8oz) tub cool whip
  • 2-3 tbs pineapple juice
  • 2 cups sliced strawberries
  • 2 cups sliced bananas
  • 1 cup pineapple chunks
  • *store-bought, or make this gluten free coconut angel food cake here.
  • **(Not coconut milk! Find this in the aisle with the margarita mix & other mixers)

what to do

whisk together pudding mix and milk until smooth and set in the fridge.

combine cream of coconut and softened cream cheese in a stand mixer until all the lumps are gone. add pineapple juice and then fold in cool whip.

layer in the trifle dish starting with angel food cake, pudding, coconut whipped topping, and fruit. repeat at least once.
