some friends had us over for dinner the other night,
and i needed something to bring fast.
i happened to have the makings for this family favorite in my cupboard…
every year at christmas,
our huge family has an enchilada dinner,
and it always ends with this.
our cute friends happened to make delicious mexican food,
so it made me think of my granny to finish with
raspberry jello poke cake!
i changed it just a bit,
and i was so impressed with myself,
i figured i’d share it…
raspberry jello poke cake
1 yellow cake mix
1 {3 oz.} pkg. raspberry jello {or any flavor really…}
1ish cup of boiling water
1/2 can of a lemon/lime soda… like Sprite.
Cool Whip
Make cake as directed on the box, baking at 350 for about 30-35 min. Let cool in pan for 15 min, then poke with a fork at 1/2 inch intervals. Dissolve jello in boiling water, add the soda and spoon over cake in the pan. Chill at least 3 or 4 hours. Top with Cool Whip.

Everytime I make enchiladas I feel the need to make this…I'm going to have to try the added sprite!<br /><br />BTW every year I make the full size batch of sauce and freeze it in containers. Yeah for us!
