i saw some kind of BBQ sandwich on pinterest oozing with naughty cheese,
and thought. ooh, wouldn’t that make a naughty panini…
and if i added some really good sourdough bread and purple slaw…?
we were right.
a perfect man meal that whipped up so fast.
going in the books for future ref for sure.
we served this up with some sweet potato fries.
{store bought, though i have a recipe here.}
BBQ Jack Panini
3{ish} boneless, skinless chicken boobs
BBQ sauce
Pepper Jack CheeseSourdough breadslaw goodness:2 cups shredded cabbage2 tablespoons minced onion2 tablespoons white vinegar2 tablespoons mayonnaise1 clove garlic, minced2 teaspoons sugar1 teaspoon ground black pepper1/2 teaspoon saltwhat to dochicken goes in the crock pot with some BBQ sauce {we like sweet baby rays}. A few hours on low if thawed, on high if frozen. When cooked through, pull it out, shred it like van halen in the kitchen aid, leaving it a bit chunky and add in more sauce for goodness sake.for the slaw:mix all ingredients together and refrigerate for at least an hour {i didn’t and it was still great, but whatever}.butter one side of your sourdough, drop it on your panini press or george forman or grill pan, add sliced pepper jack, gooey chicken, slaw goodness, more cheese, and another piece of that bread with more butter on top.warning: i can’t be held entirely responsible for the face the men will make…
