 if you are watching your figure, and really like pizza… it’s basically a no brainer.

i finished whole30 about a week ago. it was awesome and really gave me a reset that i needed to eat healthier again.

i don’t crave sugar or even carbs in the same way. and if i find that i do, i just eat like i’m on whole30 for a day or two and i’m back.

now that we are doing dairy again i can have one of our favorite go-to dinners that we love to make at our house…

it’s a nice way to jazz up some chicken and feel like you’re eating pizza without the guilt and carbs and sugar crash after. 😉

we have often done this covered in grilled veggies. whatever we find. it’s awesome.

  • 4 chicken boobs
  • 1 small {7oz} can of tomato paste
  • 1-2Tbs ranch seasoning
  • 2 cups fresh mozzarella, grated
  • 8 rings of pineapple
  • 8 slices of thin-cut ham
  • salt & pepper
  • dried oregano

what to do

-filet the chicken and place between 2 sheets of plastic wrap. beat the crap out of them with the flat side of a meat mallet. you want them thin, but not broken up.

-season with salt, pepper, and dried oregano and grill on both sides until cooked through {3-5 minutes}

-place in tinfoil until all are cooked through.

-meanwhile, combine tomato paste with ranch seasoning. tomato needs to remain thicker so it will not run off the sides. i add lots of seasoning instead of sugar, but if you must, feel free to add a little here. it will still be better than the sugar-filled pizza sauce you’d buy!

-grill the pineapple separately.

-assembly: chicken, tomato “sauce”, freshly grated cheese, ham, pineapple, and often red pepper flakes.
