honey lime chicken kabob skewers recipe
it’s warming up here, which means we are using the grill already a bit more.
{i know i know, i live in san diego… i mean, getting to the higher end of our 10 degree scale…:}

i saw this honey lime chicken a while ago over at kitchen meets girl.
a food blog that you have to check out if you haven’t. everything she posts is gold.

we put it on our schedule this last week, and i am still thinking about them…
so healthy, so easy, and i almost always have what i need for this…
my kind of week night.

andthe perfect summer meal.

and, i thought it might go perfectly with my mom’s cilantro lime rice.
ps, it did.

every time we sit to eat a meal like this, we are always kicking ourselves.

why don’t we eat like this all the time?!!!

Cilantro Lime Rice

1 tablespoon oil
3 cloves garlic, minced
1 large onion, chopped
2 cups long-grain rice {brown works too!}
1 teaspoon kosher salt
3 to 4 cups low-sodium chicken broth
juice of 3 limes and zest of 2 limes (hold back juice of 1 lime for garnish)
chopped fresh cilantro, for garnish

what to do:

heat the oil in a large skillet over medium heat. add in garlic and onions and cook for 3 to 4 minutes. reduce the heat to low and add the rice and salt. cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn’t burn. Add 2 cups of the broth and the juice and zest of 2 limes and bring it to a boil. reduce the heat to low, cover and simmer for 10 to 15 minutes or until the rice is done. Add more liquid as needed. the rice shouldn’t be sticky.
