i saw this on pinterest last week and it went right on my schedule.
greek food has sounded sooooo good to me since day one of this pregnancy…
who knows why.
in fact, the minute after i told him we were pregnant,
i made him take me out to dinner and greek was all i could think of…
but this easy recipe was a big hit, and really fun.
cc likes when he gets to grill, and we like meals that are tag-team quickies.
greek chicken gyros & tzatziki
adapted from chef in trainingingredients
marinade:
- 2 medium lemons cut in wedges {or juice of 2}
- 1/2 cup vegetable oil
- 8 garlic cloves minced
- 2 tsp oregano
- 2 tsp. salt
- 1/2 tsp. pepper
- 3 lbs. boneless, skinless chicken breasts, cubed 1in thick
- tomato, onion, & sriracha sauce for filling
tzatziki sauce:
- 1 1/2 cup plain {greek} yogurt
- 1/4 cup cucumber finely grated (squeeze off juice)
- 2 tsp. garlic
- 1/4 tsp. salt
- 1 Tbsp. olive oil
- 1 1/2 tsp. vinegar
- 1/2 tsp dill
- ground black pepper to taste
what to do
squeeze lemons into a large sealable plastic bag, leaving lemon wedges in the bag {i just used juice}. add ingredients & shake. add cubed chicken & turn to coat. seal bag & fridge for 2- 4 hrs. turning ocassionally. remove chicken, skewer, and grill over medium heat until juices run clear. {a few minutes on each side. ps. skewering is the way to go. more flavor, lots faster.}
mix together sauce ingredients and serve over gyros. with onion {purple is best}, tomato wedges, and even some cilantro. sriracha is a typical hot sauce offered with these, so we used that as well.
we used this new naan/flatbread recipe here and it worked perfectly.
prep time: 2-4 hours {marinading/rising time}
cooking time:15 minutes
serves: 3-4Enjoy!
