this week was “what i ate”
and remember how i said a few days ago how much i love my job…?
still do. but today is once of those,
“for-the-love-of-every-thing-that’s-holy-baby-molars-just-come-on-through-so-we-can-all-go-about-our-day” kind of days…
…and i have been thinking about these naughty rolls that i usually only get to make for special occasions, but this is the 2nd time in a week i whipped out my secret weapon.
a girlfriend in college,
{who fittingly had the last name of “bake”}
taught me to make these rolls.
i tweaked the recipe to make it mine, and they are divine.
they are my go-to assignment for easter, thanksgiving, christmas…
because truth be told, i’m kind of a one-hit wonder.
here, since you might need these for easter, i’ll share:
really good buttery crescent rolls

2 c. milk
1/2 c. butter (1 stick)
1/2 c. sugar
2 t. salt
7 c. flour
4 eggs (beaten)
2 T. yeast

{preheat oven to 350 degrees}

1. dissolve yeast in 1/2 c. warm water and sprinkle
with sugar
2. put first 4 ingredients in large bowl and
microwave for 4 minutes
3. add 3 cups flour to melted ingredients, stir.
4. add yeast and beaten eggs to mixture, stir
5. add another 4 cups flour to mixture, stir
6. let dough rise uncovered in bowl for 1 hour
7. after rising, divide dough in half and roll out
each half like pizza dough to 1/4 in. thick
8. spread melted butter* onto dough**
9. cut with pizza slicer into 16 slices and roll from
wide edge in
10. place rolls on greased cookie sheet**** and bake @
350 for 10-12 minutes or until lightly golden
11. brush again with butter while hot and maybe again before serving. if you are feeling particularly healthy, go ahead and dip it in melted butter before you eat it.

i triple dog dare you.

tips and secrets:
*    I actually sprinkle on some sugar here. sue me.

**  There is no such thing as too much butter… so don’t even think about skimpin!
*** If you don’t have a pizza slicer, it is easiest to cut from the middle to the outside with a sharper knife.
**** I even go further and usually use parchment
and i couldn’t help but show off my new sweet benches i found on craigslist that fit perfectly on my porch, and my oh so cute sweetstax my mom just brought me.
happy day.
