i’ve been in a bit of a funk lately.

truth is, having 3 businesses means that i can’t be everywhere at once.
and fall means more photo shoots, which i love, and more large sales, which are fun,
but it means i don’t get lots of time in the kitchen, and i spend less time with my son, who needs me.

yesterday, after seeing these on facebook, i thought, “i totally have what i need for these,
and my little guy needs some attention.”

so i told him we’d make cookies and he was the most excited and cutest little helper.
it made me realize how much i enjoy spending time with him in the kitchen.

life with 2 isn’t hard because there’s 2. it’s because HE’S IS 2!
he’s active, busy, independent, creative, and craves stimulation.
what 2 year old doesn’t?
i have found that it has nothing to do with #2 at all, it’s just his age.
it’s demanding, often like he is.

so when i am busy, {always.}
he suffers the worst.

these were fun because they were the perfect activity for little hands.
he loves “makin the dough” {rolling anything out}
and he loves “sprinkling stuff on it”
and of course, he loves “cookies”.

and lets be real, these aren’t hard.
they are truly just mini pies you can eat with your hands.
but i couldn’t stop eating them, and it made me want to add in lots of kid-friendly recipes to my future menu… we’ll see how that goes.

for 1 solid hour, we played, he helped, he complimented me,
he talked at a normal decibel level.
kitchen time could be our new therapy, for both of us.

apple pie cookies

1 pie crust {top and bottom}
2-3 Tbs cinnamon & sugar
1 can pie filling
1 egg white
caramel syrup {optional}

what to do:

roll out one of the pie crusts so it is even and smooth. spread caramel syrup over the top, as much as you like. i did a thin layer and wished i had a bit more! chop up the pie filling so apples {or whatever fruit} are small and spread evenly. Sprinkle with cinnamon & sugar.

roll out second pie crust until smooth and cut into strips with a pizza cutter. then create your lattice top, right on top of your pie filling. beat the egg white with a tablespoon of water. then brush on the top of the pie crust. sprinkle with more cinnamon & sugar.

use a cookie cutter {or a cup} dipped in flour to cut each circle. eat the spare parts cause you can’t help it, or make em into other shaped cookies. place on a greased cookie sheet {or on parchment paper}, bake for 10-15 minutes or until slightly golden at 325 degrees. let cool for a few minutes, then eat them. all. and don’t even look back. enjoy!
