i saw this recipe a while ago and since i am planning a few parties coming up,
i thought i had better try this out! it’s such a perfect shower food addition.

my husband came home last night to a cleaned out fridge {don’t get excited, it had been 2 months!}
and an entire bowl of this stuff with sweet hawaiian rolls ready to put it on. {he LOVES hawaiian rolls.}

he was impressed, and he really liked it! he had about four of these slider-sized guys…
then wrapped some up in a tortilla to take to work. double-duty.

and it helps lots. and it’s so pretty and yummy.

i never thought of adding greek yogurt to chicken salad, but it was great! adds a light tang and brightness that is perfect, and lightens it up a lot from the huge pile of mayo. i also used a rotisserie chicken from the store, so the chicken is already done, very flavorful, and has both light and dark meat, which i think adds a whole lot too…

i called cc at some point yesterday, when the toddler was in timeout for the 6th time for being a naughty dude, and i was gearing up to go to the store. we were out of diapers and formula, so i couldn’t wait… like i often do.

after a mini pep talk, i rounded the kids and went to the store to apparently load up lots on produce! it was not a great trip for said angry toddler, but we did it. and to reward myself, i put him to bed, and spent the next hour prepping veggies, and slowly, quietly, therapeutically, making this salad. worth it.

it would be great on a good ciabatta bread, or toasted bagel… excuse me while i go get another one real quick…

cc sat down after discovering all i had accomplished yesterday
and after a sweet look of amazement,
he rubbed my feet.
i about cried.
1/2 because of the foot-rub, and 1/2 because he really does love and appreciate what i do.
this morning, he left me a typed love note on my computer screen reminding me how happy he is to come home to me, especially when the house is a wreck and hair is in a bun.
{which happens 85% of the time.} man, i love that man.
