so, you’ve been making bread all week too?

this avocado chicken salad is PERFECT on a sandwich OR over greens. avocado chicken salad and perfect creamy dressing

honestly, it’s been such a joy to channel my granny this week and help brighten a few days with freshly made carbs.

we’ve whipped up the easy chicken salad version with canned stuff and we throw in pineapple in ours, like our bread store used to do,

but when i saw this one, i knew we had to try it.

we are kind of obsessed with avocado, and the hint of mint happening in there is kill.er!

i loved it just on greens myself, but had to toast up some bread for my husband because he gave me the,

“so, we’re eating ‘chick food'” face when i told him…

truth: he likes it both ways too.

and this is just another testament to why it’s awesome to buy rotisserie chicken every so often.

so many meals made so easy with already cooked chicken.

it tastes so much better than most other ways i would cook it for this {unless maybe in the crockpot with broth}

so it had lots of flavor and was a tasty addition.

{i use rotisserie chicken lots, if you want to see more, just search rotisserie on the side to see what we’ve made!}

and the dressing is so good, it can be tossed into a regular salad too if you really wanted. go for it. no one would know or care.

  • Dressing:
  • 2 avocados
  • 1 cup buttermilk
  • 1 clove garlic, chopped
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves
  • Juice from two limes
  • 1/3 cup water
  • Coarse salt and fresh ground pepper
  • Salad:
  • 3 cups shredded cooked chicken
  • 2 cups cherry tomatoes, cut in half
  • 1/2 red onion, chopped
  • 1 avocado, diced
  • Bread or lettuce to serve salad on (optional)

what to do

Combine all dressing ingredients except for salt and pepper in a blender until smooth. Add salt and pepper to taste.

Combine all salad ingredients and slowly mix in dressing until you reach the thickness and texture you like. Add salt and pepper to taste. Serve on lettuce or bread.
