Ingredients

  • 6 tablespoons butter softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups fresh or frozen fruit in small pieces

Instructions

  1. Preheat oven to 400. Grease or line muffin tins.

  2. Cream butter and sugar. Add eggs, buttermilk, and vanilla and beat until blended.

  3. In another bowl, combine the dry ingredients. Add dry mixture to the wet mixture and stir until the flour disappears.

  4. Gently stir the fruit into batter and fill muffin cups to the top. Bake 20 minutes and let cool for 5 minutes.
