Apple Cider Cinnamon Rolls & Apple Buttercream Icing

Using the best bread recipe, and fresh apples, these are definitely the best cinnamon rolls I’ve had yet!

We spent our Labor Day weekend at the cabin with all of the family disconnecting, and relaxing in the cool with my favorite people was just what the doctor ordered. Husband and I got up there the morning before everyone came and since it was still #makeandtakeweek, we decided to make up some granny bread, in hopes that we would be pulling out the warm loaves as everyone rolled into town that evening.

While the bread rose, we played outside and noticed the apple trees were ready to explode! So we spent the next 30-40 minutes apple picking and enjoying the mountain air. My mom heart was a pool of mother-butter watching my kids play outside like I did in my granny’s backyard…

I had an epiphany… just days before when I made this bread, instead of my usual 3 medium-sized loaves, I made 2 loaves AND a full batch of cinnamon rolls too! I did the same here only I whipped up a ridiculous buttercream with apple cider and real apple juice from the apples I used to load the inside with. We all agreed they were probably the best way to have cinnamon rolls. Ooey, gooey, and the apples made the inside so, yes, it must be said: moist. {Don’t hate me for using the M-word.}

So when you try these this fall, or when you come back to these around Christmas {cause they’d be PERFECT for Christmas morning…}, just remember that the white bread recipe makes 2 large loaves, or 3 medium, so you could make all of it into cinnamon rolls of course, and it would make at least 3 cookie sheets worth. With just 1/3 of the bread recipe, this made about 15 good-sized cinnamon rolls. So plan on lots of carbs. Or, in honor of Granny, just make the 2 loaves and cinnamon rolls, then give away a loaf or two.

Apple Cider Cinnamon Rolls & Apple Buttercream Icing

Ingredients

  • White bread dough {full recipe}
  • 1 cup butter, softened
  • 1 cup cinnamon
  • 1 cup sugar
  • 5-6 medium-sized green apples

  • Apple Buttercream Icing:

  • 1 cup butter, softened
  • 2 packets of apple cider drink mix
  • 1/4-1/2 cup fresh apple juice
  • 2-3 cups powdered sugar
  • dash of cinnamon

Make up the bread recipe as directed, let rise to double, and divide. {If using the full recipe, divide into 3 balls before rolling out. This is made from 1/3 the dough.}


While dough rises, peel apples, core, and put into a food processor until it is in small bits and there is juice left in the bowl. Save the juice!


Roll each ball into a large rectangle until about 1/2 in to 1/4 in thick. Spread the softened butter with your hands until fully covered, then generously coat the top in sugar and cinnamon.


Spread the apple bits over the dough so it is evenly coated, being sure to leave the juice in the bowl as best you can.


Roll up long-ways, cut every 2 inches, and place on a cookie sheet or 9×13 that has been sprayed with baking spray. {cut side goes up}.


Place on the oven while it pre-heats to 375 to let rolls rise even larger, then bake for 7-9 minutes or until the edges are barely golden. Do NOT over bake these! They’ll still be tasty, but not nearly as naughty, if you bake them too long. Depending on the size and heat of your oven, it may be more or less, so smell for them and check on them.


To make the buttercream, whip up the butter until creamy, and add the apple cider and then powdered sugar until the mixture begins to crumble. Then add the apple juice to thin it to desired consistency. {Some like the thick stuff to put on when it’s hot, some like the drizzled. It’s hard to mess up. Add more sugar and juice until you like it!} Then give it a few shakes of cinnamon and it’s ready to put all over your warm cinnamon rolls!
