so 3 summers ago, before i was even pregnant with baby 2, my husband and i joined his parents and sister on an adventure in cabo san lucas, mexico. it was one of those legitimate relaxing vacations that involved sitting by the pool and ordering up a million pina coladas and nachos and being as lazy as humanly possible. in our case, since we are not alcohol drinkers, we ordered a “pinata” wherever we went.

so since we are planning what food to make for Cinco De Mayo, we wanted to try a pina colada smoothie, to see if we could even come close, and all the recipes we tried were so bland and blah…

we had this random idea to throw some mango in there, and with the dash of rum flavor, it was like we were back in mexico… it totally solved my case of the blahs we were having.

and we wanted to use things that we often have around so it would be easy to throw together. we almost always have some kind of pineapple in the summer, we cut some, freeze it, and use it for lots of stuff… we also usually have greek yogurt. though this time i grabbed a toasted coconut vanilla greek yogurt and it MADE the smoothie. do find it!

also, you’ll want to grab yourself a pineapple corer like this one if you don’t have one already. it takes 2 seconds and hollows out a pineapple so you can use the slices and then use the shell as a cup. it turns us into giddy ten year olds every time.

so, we also topped these with a french vanilla cream, which i think adds to the flavor a whole lot too. so i know people are picky about whipped creams sometimes, but give it a try!!

Ingredients

  • 1/2 can unsweetened coconut milk
  • 1 1/2 cups frozen pineapple chunks
  • 1/4 cup pineapple juice
  • 1 5oz coconut Greek yogurt {we used coconut vanilla}
  • 4 oz frozen mangos in juice (fruit cup)
  • 1 tsp imitation rum extract
  • 2 TBs honey
  • 1 cup ice
  • optional: french vanilla whipped cream & maraschino cherry to top

what to do

put all items in the blender {ice last}, and blend until smooth. drink instantly!
