sweetness overload : rice krispie cinnamon rolls

yep. i agree. it’s a bit insane. but it’s pretty naughty. and i’ll tell you how to make it a few ways you might like!

i won’t lie to you. these are ridiculous.

as in, i-have-no-business-eating-these ridiculous.

they are not like other things i have made where i tell you i could sit and eat the whole batch.

these are a one and done kind of treat unless you are a sugar addict. cause they are suh-weet, my friends.


i had this idea a week ago and have attempted to make them 3 times. this is the final result. they are suuuuper yummy, but the light cream cheese frosting is by far the star here.

so be sure to save that one for future ref. you’ll want to use it on EVERYTHING.

so i started with classic rice krispies, only i kicked em up with a little cinnamon and vanilla. this alone is amazing. i might never make them plain again, to be frank.

then i whipped up a little brown sugar glaze to spread over the whole thing and carefully rolled it up using the parchment as a guide.

then i just chilled that log up until firm and cut them with a super sharp knife and drizzled the best cream cheese icing i’ve ever had on top.

yes. yes. yes!

is the brown sugar stuff overkill? perhaps. does it look perfect? sure.

if you’re afraid of going all the way cause it sounds like you might get diabetes just looking at these, just make the rice krispies as they are here and drizzle the cream cheese frosting over them.

you WILL NOT be disappointed!

the icing has less sugar than most recipes i’ve ever tried so it’s not super sweet and gives it that hint of cream cheese tang that makes it PERFECT for this.

and i just think these would make for a great party treat because they’re kind of unique.

  • rice krispies:
  • 1/2 cup butter
  • 1 bag large marshmallows
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 6 cups rice krispies
  • sugar glaze:
  • 1 cup dark brown sugar
  • 1/3 cup butter
  • 1/2 tsp vanilla
  • 1Tbs cinnamon
  • 1/3 can sweetened condensed milk {6oz}
  • icing:
  • 1/2 cup butter, room temp
  • 8oz cream cheese, room temp
  • 1 cup powdered sugar
  • 1 tsp lemon juice

what to do

melt butter in a large bowl in the microwave for 45 seconds or until melted. add marshmallows and toss until coated. melt in microwave for 90 seconds and stir to combine. add vanilla and cinnamon and combine. stir in rice krispies and lay flat onto parchment-lined cookie sheet. it may not fill the space, but it needs to be about that size and shape. place in the refrigerator.

glaze: melt butter on low heat in a sauce pan. just before completely melted, add remaining ingredients. bring to a boil and stir for 1-2 minutes and turn it off. spread a thin layer evenly over the rice krispie layer and roll into a log, cover, and chill until firm.

perfect cream cheese frosting:

using a hand mixer, whip the cream cheese until creamy. add in the butter 1 tablespoon at a time until combined, then add sugar and lemon and beat until combined. it will have the perfect texture for piping or drizzling.
