and an awesome back-to-school giveaway from Silhouette you won’t want to miss!

hawaiian sweet roll #copycat

i haven’t been eating many carbs lately, despite what it may look like on the blog,

but i was searching through pinterest last week when we were meal-planning, and i saw this one.

my hawaiian roll-lover/husband was drooling. we had to try em out!

{it has been SO HARD to keep a consistent meal-planning schedule going this summer. am i the only one having trouble? i just haven’t wanted to cook ANYTHING. so we’ve done lots of eating out, and i’m a little sad about it. alas, this is a great go-to for dinners that will hopefully soften the blow of back-to-school for some of you. {let’s be real. who is really sad about kids going back to school though…?}

hawaiian rolls were something that didn’t happen often in my home growing up because i was used to homemade bread. {i know, my mom is a bit of an overachiever.} she also had 4 huge boys to feed, so can you blame her for wanting to save the $30 a week it probably saved her in bread alone? what? i’m not dramatic. and i never exaggerate.

i remember buying hawaiian rolls in college just to have for myself. i would snack on em all the time or i would throw chicken salad on those babies for a quick lunch. they are beyond comfort food for me.

RECIPE NOTE: i used the exact amount of flour that was in this recipe, but i would recommend adding it slowly until the dough is still a bit sticky and soft. these were a thicker dough and i thought a bit more dense than the real deal. as long as you add up to the amount here {or slightly less}, it should ensure the light and fluffy roll we all know so well. and the nice thing is that you can leave out about 2 tablespoons of sugar for a less-sweet version and they are fab. we did that for the sliders i’ll share with you tomorrow… bomb.com is all i have to say!

Ingredients

  • 1/2 cup pineapple juice
  • 1/2 cup warm milk (100 – 110°F)
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 2 whole eggs, lightly beaten
  • 6 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 2 1/4 teaspoons (1 packet) instant yeast
  • 4 1/2 cups (20 ounces) bread flour

  • for baking:
  • 1 egg

what to do

combine the pineapple juice, milk, melted butter, eggs, sugar, salt, and yeast in the bowl of a stand mixer. {if the yeast is not instant, let stand in mixer with milk and pineapple juice for 5 minutes before adding other ingredients.}

add 2 cups of flour and mix with a wooden spoon until it is slightly incorporated. attach dough hook and while on mix while adding remaining 2 – 2 1/2 cups flour, letting it mix completely until a soft dough forms. {if that is at 2 cups, stop!}

place dough in a bowl sprayed with cooking spray, cover with plastic wrap and let rise for about an hour or until doubled in size.

prepare a 9×13 pan with cooking spray {i use coconut oil spray}. deflate and knead the dough, then cut into 15 equal parts, roll into balls and place into the pan. mix 1 beaten egg with 2 tablespoons of water and brush over each roll, then let them rise again about a half hour or until doubled in size.

bake at 375 degrees for 20 minutes or until the tops start to golden.
