oatmeal chocolate chip cookie dough bars no bake

 i’ll just say it. because i know we’re friends enough that you won’t judge me for it.

i eat cookie dough. generally by the batch when i’m pms-ing. {cause that’s when NO ONE will dare stop me}

i like my own oatmeal chocolate chip dough the best,

but yeah, my husband who is terrified of raw eggs saw me checking out this recipe and said, “you should probably try that”.

because yes, sadly, he’s watched me consume lots of raw egg over our last few years. sigh…

 

these cookie dough bars use sweetened condensed milk instead of egg, and there are few who would be sad about that.

i missed the texture of my good old oatmeal chocolate chip cookies though, so i added oatmeal back in, and they were delightful!

these would be the perfect girls’ night treat, cause seriously, what girl doesn’t love a hunk of cookie dough? {don’t answer that. it will probably make me feel fat.}

Ingredients

  • 1/2 c. unsalted butter, softened
  • 3/4 c. packed light brown sugar
  • 1 tsp. vanilla extract
  • 2 c. all purpose flour
  • 1 (14 oz.) can sweetened condensed milk
  • 1 1/2-2 cups quick oats
  • 1 1/2 c. mini chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/2 cup milk chocolate chips

what to do

1. line an 8×8 or a 9×9 pan with tin foil and set aside.

2. whip the crap out of the salted butter in a mixer. add in the brown sugar until fluffy {2-3 minutes} then add vanilla until combined.

3. alternate adding flour and sweetened condensed milk until fully encorporated, then add oats and the mini chocolate chips.

4. press into the pan, cover, and chill for at least 3 hours or until firm.

5. in a microwave safe bowl, heat peanut butter and chocolate chips in increments of 30 seconds until melted. pour over the chilled dough and let chill for another hour or until firm.

    Oh my gosh, Meg, I have a newfound love for you and your blog – seriously, how many people would freely admit to pigging out on cookie dough while pms-ing, even though we know we all do it! LOVE! Thanks for sharing this recipe – think it’ll be my next pms-ing binge 😉
