i think ham, like honey baked ham, is probably my favorite meat.

i mean i really like me some steak, a naughty filet mignon or new york strip… and of course i’m a chicken girl… but man i could sit in front of a full honey ham and pick at that thing all night…

after easter dinner, or christmas, or thanksgiving…. that’s where i am,
unashamedly scavenging meat with my bare hands like a monster.

so after our meal on sunday, when my uncle handed me a ziploc and pointed to the entire extra baked ham, i surely did not turn him down!

“are you sure? you don’t want to keep some for your family?? oh ok, if you insist.”
leftovers are my favorite. when they are ham.

so last night i thought of what sounded the most yummy and called my mom for a consult… often my mom and i are like the architect and a contractor…
i come up with an idea for something super random,
and she tells me if it will work and how to do it…

ironically, she had made something very similar with her leftovers so i jotted down what she did, added to it, and here is our ham and frite-tah-tah

to be perfectly fair, i had no idea how this was going to turn out… but it was so comfort food-ie and we loved it. everyone had seconds, including the toddler, and husband raved, and immediately packed some up for today’s lunch with giddy fingers… so we are counting this as a huge win and i wanted it saved in the archives for future use!

obviously i used leftover ham for his one, but it would also work with bacon if you don’t have ham…

here’s a menu planning tip my mom taught me too: if you start the week with a huge chunk of meat you can repurpose it for 2-3 meals over the week… {i.e. start with ham, then make this frittata, then paninis, or eggs benedict… or start with a roast, then do tacos….etc.} so make a ham on a sunday and put it to good use!!

Ingredients

  • 1 cup cooked hash browns
  • 6 eggs
  • 1/4 cup flour

  • 1 cup cooked honey ham, chopped
  • 1/2 red onion, diced
  • 1/2 large red bell pepper
  • 1/2 large yellow pepper
  • 1 small can diced green chili
  • red pepper flakes
  • salt pepper

  • 1/4 cup butter
  • 1/3 cup flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 cups milk
  • 1 cup cheese (we used mexican blend and pepper jack)
  • green onion (garnish)

what to do

1. preheat oven for 300 degrees.

2. place cooked hash browns in the bottom of a greased 9 by 13 pan.

3. combine eggs and 1/4 cup flour in blender and pour over hash browns evenly.

4. using a small amount of oil, sauté the onion and peppers in a skillet for 1-2 minutes, add green chili, ham, crushed red pepper, and salt and pepper to taste.

5. spread ham and veggies evenly over the top of the egg layer.

6. put butter in a small saucepan on medium heat until melted, then add 1/3 cup flour and salt and pepper. quickly mix in milk and turn to low, constantly stirring to avoid burning. once the mixture behind to thicken, remove from heat and pour over he top of the dish.

7. bake at 300 for 20-25 minutes, until center is cooked through. immediately cover in cheese and let sit for at least 5 minutes before serving. garnish with green onion.
