1 – i am not a huge fan of peppermint bark
2 – i am not a huge fan of dark chocolate
3 – i am not a huge fan of white chocolate

what? you haven’t been paying attention? who’s the most important person here? you don’t know every detail about me yet?? i only scream them to you everywhere in this world of open books that we live in!!

ok, i’ll tell you. i LOVE dark chocolate. like, sneak it at nap time love it. so i have had only one kind of peppermint bark that was… ok. it was a ghiradelli store-bought kind that was mostly dark chocolate, hint of white, and peppermint on top. but most i’ve tried have so much white chocolate in it that it ruins it for me. and milk chocolate only… sort of satisfies.
and we all hate to be only sort of satisfied…

so i made one with mint, the good stuff, and an almond bark instead of white chocolate chips. i think it tastes worlds better and breaks so nicely, but that’s just me. and if you are really feeling all festive and minty, feel free to add a bit of mint extract to your chocolate after it’s melted to really go wild. of course just after i tried this kind i wanted to make a dark chocolate with sea salt kind… then realized i should just keep that in the cupboard. those ghiradelli squares that are dark chocolate with caramel inside and sea salt? stop, i’m having a mini foodgasm.

ps, you can find andes mints in chip form {just cut into bits} at walmart.
the fancy grocery stores don’t usually carry it. jerks.

mint chocolate bark

Ingredients

  • 3/4 cup vanilla flavored almond bark
  • 1 cup semi-sweet/dark chocolate chips
  • 1/2 tsp mint extract {optional}
  • 1 package andes mints {or 1 bag andes mint chips}

what to do

melt the almond bark in a microwave dish at 20-30 second intervals. when almost melted, remove and stir until completely melted. spread evenly onto wax paper or tin foil and let cool completely.

melt chocolate chips and when stirring, you can add the mint extract. stir until smooth and then spread to cover the vanilla layer. immediately melt 3/4 cup andes mints and stir until smooth, then add to top of partially melted chocolate. swirl the two together to create cool minty swirl lines. immediately sprinkle the top with mint pieces while still unset. let cool completely, then break into chunks. keep in a cool place.
