this is one of those meals that we bust out maybe once a month
when we want to feel fancy.
it’s one of our very favorites.
 
we usually make our own naan, but it would go lots faster to buy it too of course.
we’ve been using this recipe here for naan, 
but i’m trying a new one tonight, so i’ll let you know how that goes!
 
chicken tikka masala 
is one of those famous indian dishes that if you like heat,
and flavor, and eating…. you’ll love without trying.
 
we have tried this out on lots of friends
{mostly cause it’s fun to do with a group… ya know, the grilling and the bread…}
and all have loved it.
 
we’ve made a few changes this time and decided this one was the best yet.

chicken tikka masala and naan

Ingredients

  • the marinade:
  • 1 cup yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon garam masala*
  • 2 teaspoons cayenne pepper
  • 2 teaspoons freshly ground black pepper
  • 1 tablespoon minced fresh ginger
  • 1 tsp salt, or to taste
  • 3 chicken boobs, cut
  • into bite-size pieces
  • 4-5 long skewers
  • the sauce:
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1-2 jalapenos pepper, finely chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 3 teaspoons garam masala
  • 1/2 teaspoon salt, or to taste
  • 1 (15 ounce) can tomato sauce
  • 1 3/4 cup heavy cream {try coconut milk too!}
  • 1/2 cup chopped fresh cilantro

what to do

1. combine all marinade stuff in a bowl. stir in chicken boobs, cover, and refrigerate for 1 hour.

2. preheat the grill on high {yes, you can use a grill pan, but yes, it’s better on the grill. having lived in an apt without one until now, we know.}

3. skewer the chicken nice n tight. grill until juices run clear, about 5 minutes on each side.

4. melt butter in a large heavy skillet over medium heat {feel free to use coconut oil if butter makes you antsy}. saute garlic and jalapeno for 1 minute. add in cumin, paprika, garam masala, and salt. stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. add grilled chicken, and simmer for another 10 minutes. serve over basmati rice, and garnish with fresh cilantro.

*garam masala- you might not have it. just put it on your list. you’ll use it lots once you try it. it’s a great spice blend, a warm heat with a little hint of cinnamon in there. uh yes.

notes: it gets hotter the longer it simmers, so if you are not into the heat, start low, and let it simmer longer… or just start with one jalapeno. we almost always go with 2, but then we are the ones that order the high heat when we go to thai or indian places… so there’s that…

    Oh gosh this looks so delicious, Indian food is my favorite I love Channa Masala, I am vegan so never had the Chicken Tikka Masala. I am so happy to have found your blog and design blog. Your blog is phenomenal.
