mr. clifford’s grilled artichoke and spicy aioli

funny story:
when i was first married, cc asked if we could make artichoke,
i had to admit that i hadn’t ever had it.

so, we boiled it, and he taught me how to eat it,
leaf by leaf, the way he did, with mayo. {which i thought was yuck.}
so i made myself a hollandaise and that made it a bit better….

when cc and i were in santa maria, we had artichoke almost twice a week because it was usually 2 for a $1 at the market by our house.
{what happens when you live where they grow things}

we had gone to an Irish pub {one of the few good restaurants in that small town, that isn’t a chain}
and had this as an appetizer.
we spent weeks working at a recipe,
and finally came up with our version of

grilled artichoke & spicy aoili

Ingredients

  • Marinade:
  • 1/3 cup olive oil
  • 3 T balsamic vinegar
  • 2 T salt
  • 1 T Black pepper
  • 1/2 T white ground pepper (optional)
  • Cayenne pepper to taste
  • 1/2 T Oregano flakes
  • +/- 1 1/2 T Lawery’s
  • 1 T minced garlic

  • Spicy aoili:
  • {ready for this?}

  • 1/2 cup mayo
  • tapatio hot sauce {or whatever your fave is.}

what to do

Cut the artichoke in half first, {so it doesn’t fall apart later},

then place in boiling water for about 40 minutes.


Spoon out the feathery middle part, without hurting the heart,

the best part.


Spoon the marinade over the insides of the artichoke while on a flat pan or skillet,

then place face down and turn the stove to med-hi. Remove once there is a nice char.


Note: if you have or know of santa maria seasoning,

this is much easier. we had to re-re-create it after we ran out.

santa maria seasoning + oil + balsamic does the trick just fine…

but for the rest of us, you’ll have to make your own.
